we celebrated with ice cream!

to celebrate the opening of our shop yesterday, i made ice cream. it was delicious if i do say so myself but don't be too impressed at my culinary skills. it's a healthy recipe from good housekeeping that only has 4 ingredients & only takes about 10 minutes to put together. if i can do it, anyone can! here's the recipe in case you want to make your own batch:healthy strawberry ice cream
1 lb. frozen strawberries
1 cup 2% plain greek yogurt
1/4 cup sugar
1/2 tsp vanilla extract

-in a food processor, pulse 1 cup of strawberries until finely chopped. transfer chopped berries to a large metal bowl.
-in food processor, puree yogurt, sugar, vanilla and remaining berries until smooth. transfer to bowl with strawberries and stir until combined. cover and freeze until firm but not hard.
-and get this, each serving has only 70 calories & less than 1/2 gram of saturated fat compared to about 282 calories & 12 grams of fat in traditional strawberry ice cream.

Thanks! I'm going to give this a try! I made peach & raspberry sorbet but it is really sweet. This sounds like it might be a bit less of a sugar surge.
