i'm a crafty girl so i have to appreciate the work of other crafty-hat-making-girls.
recipe:
-1/2 cup shortening
-1 cup brown sugar (packed)
-1 egg
-about 1 tbsp grated lemon rind
-1 1/2 cups flour
-1/2 tsp soda
-1/2 tsp cream of tartar
-1/4 tsp salt
-1/4 tsp ginger
-granulated sugar
heat oven to 350 degrees. mix shortening, sugar and egg thoroughly; blend lemon rind. measure flour by dipping method or by sifting. blend dry ingredients; stir into sugar mixture. roll 1" balls; dip tops in granulated sugar. bake on ungreased baking sheet 10 to 12 minutes. makes about 3 dozen cookies.
i used butter not shortening and i forgot the cream of tartar but my cookies turned out a little flat but fine. and i love the delicate lemon flavor of these cookies! i was hoping for a more distinct "crinkle" on top so i roll my 2nd dozen in powdered sugar but it pretty much all melted away too. oh well, they still tasted great!
