so when you have leftover pumpkin from making pumpkin spice syrup, what should you do? well make pumpkin whoopie pies of course! i've had this recipe from libby & very best baking in my "to try" file for a few years now and i'm so happy that i finally got around to making them because they are awesome! they are very moist and flavorful but not too spicy or too sweet.

i made full sized whoopie pies, not mini because the idea of having 36 servings sounded crazy! (and just fyi, i made 20ish pies and i adjusted the bake time to approximately 14-15 minutes.)
