...then i saw this thing on pinterest. seriously, do they have shirts that say that? i really need one, it would save me so much time explaining myself.
so anyway, i found this recipe for banana split bars and as i had a half a jar of maraschino cherries on hand (a very strange ingredient to find at my house), i found myself in the kitchen. thank you to deborah for her fabulous recipe. check out her cute blog, taste and tell.

i think i can sew...
thanks to the super cute projects i find on pinterest and being totally deluded about my sewing skills, i have a big stack of fabric waiting to be transformed! and some of it has been waiting quite a while. but by confessing this, hopefully i will be a little more accountable and a little more motivated to sew, sew, sew!

cookie #15: cherry-coconut bars
recipe:
-1 cup flour
-1/2 cup butter or margarine
-3 tbsp confectioners sugar
-2 eggs, slightly beaten
-1 cup sugar
-1/4 cup flour
-1/2 tsp baking powder
-1/4 tsp salt
-1 tsp vanilla
-3/4 cup chopped nuts
-1/2 cup coconut
-1/2 cup quartered maraschino cherries
heat oven to 350 degrees. measure flour by dipping or sifting. with hands, mix 1 cup flour, butter and confectioners sugar until smooth. spread thin with fingers in ungreased square pan, 8x8. bake about 25 minutes.
stir rest of ingredients into eggs. spread over top of baked pastry (no need to cool). bake about 25 minutes. cool. cut into bars. makes 18 bars.

my notes:
cherry and coconut are a yummy combination, especially with a shortbread crust! and my lovely coworkers all gave them a big thumbs up too!

vegan coconut cupcakes
my first adventure in vegan baking!
so i believe i've mentioned that we celebrate birthdays at my workplace with cupcakes and takeout lunches. not terribly original but super fun! well one of our summer employees, back from college and fairly recently vegan, just celebrated her birthday. i was very excited and just a bit intimidated to try baking my first batch of vegan cupcakes!
i turned to chef chloe for a recipe because i watched her on cupcake wars (i bet you're not surprised i watch cupcake wars). her recipe for fluffy coconut cupcakes were a HUGE hit, moist and very fluffy. the birthday girl was pleased but so were all the non-vegans. i highly recommend them for all your vegans & non-vegans celebrating birthdays, graduations, baby showers or wednesdays for that matter. coconut cupcakes are really good for anything!

cookie #14: oatsies
recipe:
-2 cups rolled oats
-1/2 cup brown sugar (packed)
-1/2 cup butter or margarine
-1/4 cup dark corn syrup
-1/2 tsp salt
-1 tsp vanilla
-6 oz chocolate chips
-1/4 cup chopped nuts
heat oven to 400 degrees. mix oats and sugar. melt butter; add syrup, salt, and vanilla. pour over the oats and sugar; mix well. pat out in greased square pan, 9x9. bake 8 to 10 minutes. do not over bake. it will be bubbly when done. while this cools, melt chocolate; sprinkle with nuts. cut into bars. make 32 bars.

this caramel-like bar cookie is almost like a candy bar, very yummy! and might be even better with milk chocolate melted on top. definitely a keeper recipe!

100 miles before summer
these days a lot of my sentences start with the phrase "so i saw this fun thing on instagram...", which my husband must just love but at least it's a change from my old standby, "i saw this adorable thing on pinterest..."
so anyways i saw this fun thing on instagram about walking or running 100 miles before summer. anyone who knows me is going to be surprised that something about fitness caught my eye, i am a pretty hardcore couch potato but i guess i was looking for a challenge. so two cute fitness trainers are challenging everyone to walk or run 100 miles before summer. luckily for me summer comes a bit later in the pacific northwest so i still have time. i have walked 18 miles so far and while i have many miles to go, i am headed in the right direction.
